Sick of leftovers


While all of the leftovers have been good, I really wanted something more fresh tonight. I decided to cook a couple more of George Stella's recipes. This time it was spinach and feta stuffed salmon. I also cooked his Little Mama's Side Dish which is a cauliflower based recipe I like.

More Meatloaf


I ate the remaining meatloaf tonight. There was also some broccoli and cauliflower left, so I steamed those too. I did not feel like making more tea. Instead I poured a glass of my Madonna Estates 2002 Cabernet Sauvignon. That also seemed to help make the meal feel a bit more upscale.

It's a little chili tonight


More leftover chili con carne tonight. I did not make anything fancy for breakfast to photograph. Instead I took a picture of the soft taco sort of thing I used the chili in. Sorry, nothing too exciting tonight.

Loafing around


Something revolving around beef sounded good tonight. There was no big rush, so I decided to try a stuffed/rolled meatloaf. It turned out okay, nothing spectacular. The meatloaf itself just sort of fell apart where the ham and cheese were rolled in. All of the flavors did not really mesh well for me either. In the future I will probably stick with Alton Brown's recipe. Oh, I also had some steamed broccoli and cauliflower.

Rules are made to be broken


It has not even been a full week yet, but I am already breaking the rules. What a rebel! I plan to have some leftover chili con carne from yesterday for dinner. That did not sound too exciting. Instead here is a picture of the omelet I had for breakfast. It included red pepper, green pepper, red onion, mushrooms, mozzarella, and cheddar cheese. I also cooked up a few pieces of bacon.

Meat


After all of the salads this week, I wanted something with a bit more meat for dinner. I went with a chili con carne recipe from one of George Stella's cookbooks. As usual, I replaced the ground beef with ground turkey for a lower fat content. Sometimes I substitute portobello mushrooms for half the meat for even lower fat, but stuck with all turkey this time. I placed the chili in a whole wheat tortilla for a soft taco sort of thing. I chopped up some additional red onion and tomato along with shredding some lettuce to put on top. A bit of sour cream added a little coolness. Unfortunately the avocados I purchased were not quite ripe enough.

A little less spicy


It's Thursday. Obviously that means I had some Rudy's BBQ for lunch. Pickles and onions are the only vegetables available there. I decided to use up the last of my chicken and boiled eggs to make another salad tonight. Mostly the same ingredients as earlier this week. I picked up some more cucumber and tomato on my way home. This time I left out the blue cheese and switch to a spicy ranch dressing.

Spicy


One of my friends at work had a lunch yesterday with salmon, spinach, and beans. He was not looking forward to it, but seeing those ingredients reminded me of the blackened salmon I occasionally make. That dish was on my mind when I stopped at the grocery store on my way home. Luckily I already had a can of black soy beans at home. They are only carried at Whole Foods and Central Market, not the HEB I went to tonight. I'll have to give this recipe to my friend.

Deja vu


I worked pretty late tonight, so I did not feel like doing a lot for dinner. I was more interested in just getting something to eat. There were a bunch of vegetables already chopped from the salad preparations last night. I just cut up the few items still whole to have another salad today. Nothing fancy in the photography either. I did notice you could not see the actual lettuce in yesterday's post, so I made sure it was in tonight's picture.

Iceberg dead ahead!


There were some out of town guests at work today. They ordered too much food for their lunch, so I grabbed some of the leftover BBQ rather than going out. I figured something with a lot of vegetables would be a nice change for dinner to oppose the mostly meat lunch. I went with a salad. That always sounds easy and straight forward, but chopping all of the ingredients takes a while. This time I had iceberg lettuce, tomato, red onion, red pepper, mushrooms, cucumber, celery, boiled egg, bacon bits, almond slices, blue cheese, and some of the chicken from last night. Salad is generally considered boring, so I tried to spice up the picture with some HDR photography.

Creamy


Tonight I made chicken with tarragon cream sauce and a side of steamed vegetables. It has been a little while since the last time I had this dish, so I ended up making way too much sauce. At least half of it went to waste. Oh well. Something to remember for next time.

There is no way I can eat an entire package of chicken breasts in one sitting. I still cooked them all in anticipation of using the remaining pieces later in the week.
