Yet even more ham

Tonight's meal was the last of the baked ham. For some reason I decided to make some creamed spinach to go along with it. I don't know that it was the best combination in the world. At least each individual item tasted good on its own.

I heated up some more of the ham this evening. This time I went with mock mashed potatoes for the side. Still a bunch of meat for the next day or two.

More ham

As expected, there are plenty of leftovers from yesterday. The green bean casserole got finished off. I'll have to figure out something different to make as a side tomorrow. Plenty of ham is still left.

Ham

After last night's rather simple meal of soup, I decided to take a bit more time today. For some reason I became fixated on baking a ham. I have no idea where that came from, but I figured I would just go along with the craving. I found a recipe for tangerine glazed ham that sounded good. My grocery store only had a handful of tangerines in stock not all of which were in good shape. I purchased some orange juice to make up the difference. The ham tasted great, but I will probably try it again when I have access to more tangerines.


The recipe included cooking some carrots in the glaze along with the ham. That did not seem like enough vegetables, so I also baked a green bean casserole. It also turned out pretty tasty. This should also leave me with plenty of leftovers for the next couple days.

Roasted tomato

The ingredients for a roasted tomato soup were already in my pantry. I did not feel like going out shopping, so dinner was just the soup. The recipe called for blending everything after cooking to smooth it out. I decided to leave it chunky since I had nothing to go with it. Unfortunately I forgot there was only enough ingredients to make half a batch until half way through cooking. It still turned out okay, but I will have to try making this again with the correct proportions.

Leftover salad

Nothing very exciting tonight. I threw all of the leftover vegetables I did not include in last night's salad into a Tupperware container. That was my dinner this evening.

Salad and dessert

No concerts to attend tonight. I used the same ingredients from last night to put together another salad. In a slightly ironic turn, I then proceeded to bake two desserts for my company's Thanksgiving potluck tomorrow. I could not find an appetizer or side dish I thought would be okay cold, so that is why the two desserts.


Ever since I saw the first episode of the Firefly series, I wanted to get an apple peeler. It just seemed to be the ultimate form of luxury to have a complicated device who's soul purpose is to peel an apple. Luckily I received one as a gift (thanks mom!). Baking an apple bread pudding was a great excuse to break it out for duty. Even though the bread pudding would also be better warm, I figured it would still taste pretty good tomorrow. Everyone can heat up their slices in a microwave if they need to as well.


Here is the end result. Apple bread pudding is on the left. To the right are the pumpkin bars I also baked. I did not purchase powdered sugar at the grocery store since I was sure there was already some in my pantry. Unfortunately I was mistaken. That meant the frosting turned out rather crunchy after using regular sugar. It still tasted alright, so hopefully they still go over well tomorrow.

Salad

I attended another concert this evening. Luckily it was on the western edge of downtown Austin. That meant I could park much closer to the venue and avoid walking past food vendors. Avoiding those temptations allowed me to stick with a salad tonight.

Pizza

I attended a concert in downtown Austin tonight. There were quite a few places selling pizza along the way. That really got me in the mood for pizza, but none of the actual ones I saw grabbed me. Instead I purchased a frozen pizza from the grocery store on my way home. It was about the same price for a single slice at the restaurants.

Omelet

I got a bit of a slow start today. I was not terribly hungry, so I just sort of snacked most of the day. That left the ingredients I had purchased for an omelet. I decided to cook up the omelet for dinner. There was bell pepper, onion, and mushrooms for filling. Some cheese made its way in there too.

Chili con carne

I was fairly tired when leaving work this evening. This left me not looking forward to shopping for groceries on the way home. Luckily I realized the ingredients required for chili con carne were already in my fridge. The amount of ground beef left over from the ranch burgers was about half what the recipe calls for. I actually ended up liking the larger portion of vegetables this way.

Ranch burger

I cooked a couple ranch burgers tonight. They are just ground beef with some ranch dressing mix added in. I also grilled some onions to top them along with cheddar cheese. They were placed inside of whole wheat tortillas. There were also sliced tomatoes and shredded lettuce.

Spagetti

I decided to go ahead and make some spaghetti this week. I purchased some whole wheat pasta and a jar of sauce. To this I added some bell peppers, onion, and mushrooms. I also thawed out some Kreuz Market jalapeno cheese sausage to throw in. Everything tasted pretty good, but some of the subtler flavors of the sausage got lost.

Technical difficulties

My descriptions might be a bit vague for the coming weeks. There have been problems preventing me from updating this website for a while. The hosting company took a couple weeks to figure out what was blocking browsers from connecting with my domain name. Just when that was resolved, they had a massive power outage at their server farm. They had to shut down all of the systems to prevent data loss, but it took them several more days to get everything running smoothly again. I took pictures of my meals but not any notes, so some details may be lacking.

Evidently I ate an omelet this evening. It was made of eggs. There were red and green bell peppers, onion, mushrooms, and cheese inside.

Cheese topped steak

I was really craving another steak and creamed spinach today. No idea what brought that on, but I figured I would go along with it. There was a bit of blue cheese still in the fridge which I threw on top. It did not get quite as browned as I would like, but I did not want to chance over cooking the steak. I added too much of the liquid ingredients to the spinach. It still tasted fine, but had the consistency of soup. You can see I also made mock mashed potatoes again.

What's in the fridge?

Today was Bug Bashing Friday at work. I stayed a bit later to ensure one of my changes really did fix the bug. That left me fairly tired and hungry when I finally left, so I did not feel like spending time at the grocery store. Instead I drove straight home and figured out something to eat based on what was already in my refrigerator. I thawed out some of my Kreuz jalapeno cheese sausage. While that was heating up, I cooked a veggie omelet.

Chicken

I cooked up a package of chicken breasts tonight. For today's dinner, I made some tarragon cream sauce and steamed vegetables. The remaining chicken will get used for a meal or two later this week, probably a salad.

I wanted some seafood tonight, so I made blackened salmon again. I made a batch of mock mashed potatoes as a side dish. I still cooked up a little spinach and black soy beans to also go with it.

Steak

Several of my co-workers were discussing why they enjoy steak today. Overhearing that conversation really put me in the mood to eat a steak. I did not go with any fancy sauces this time. Tonight it was just cooked meat. Creamed spinach made another appearance it the role of side dish. Thankfully I have getting better at making steaks and managed to avoid overcooking this one.

Crazy pizza

My first inclination today was to cook some whole wheat spaghetti. For some reason that idea became more passe as the day progressed. My cravings continued to lean toward Italian themed food however. This produced an ideal scenario for further low-carb pizza crust experimentation. Previous versions utilizing whole wheat or soy flour crusts resulted in unusual tastes. Leave it to the internet to provide a crust based on cauliflower! It certainly did not compare to a great pizza crust, but there were no odd aftertastes as previous recipes. My preference would be a crust with more structural rigidity. This instance had me using a fork. Still, this recipe might be worth future exploration.

Not exactly crazy

I could not come up with a crazy meal to cook tonight. I had purchased ingredients to make an omelet for breakfast this morning. Evidently I was rather tired as I slept in quite a bit. As a result, I just had an early lunch instead of breakfast. My omelet craving was still in full effect as you can well imagine. That made the decision of this evening's menu fairly straightforward once I abandoned the "crazy" idea.
